The Rocket made light work of an under-par Ding to retain his title and collect the £60,000 first prize at the Potters Leisure Resort in Hopton-on-Sea.
The match proved to be a one-sided affair as three time world champion O'Sullivan made his opponent pay for frequent mistakes.
He took the opener with a tidy break of 52, and soon doubled his lead, recovering from a poor bout of safety play to fire in a 92.
The Rocket took a scrappy third frame to move into a commanding 3-0 lead, after both had missed numerous potting opportunities.
Ding had already beaten O'Sullivan this earlier in the season, but needed a miracle if he was to repeat that feat; he broke down after a run of 42, allowing O’Sullivan in to clear up and go to 4-0 ahead.
The Dragon kept himself interested prior to the interval, doubling a red and going on to take frame five to reduce the defecit to 4-1.
The frame would prove to be the one and only the Chinese youngster would clinch, as O'Sullivan capitalised on more mistakes in among the balls by Ding, taking the next two frames.
He then sealed the victory in the next with a fine break of 77 to be crowned league champion once again.
“That was brilliant," said O'Sullivan. "I played good and I know Ding didn’t play as good as he could. He had a bad kick luckily for me and did a decent clearance to take the frame and go 6-1.”
“This is one that’s always nice to win. It’s a fantastic crowd, a great weekend of snooker and hopefully it will set me up to win a few more this season,” he added.
He will be looking to repeat the outcome when the two meet in another classic at the Masters in January.
